[Kotahi] Easily add captions to images

Hi Everyone,

I trust you've all had a good week!

This week we made it easy to identify images and add captions when editing
manuscripts in the Wax word processor. Clicking on an image will now
display a 'caption' textbook making it easier to insert image captions.
