[Kotahi] Export JATS XML from Wax word processor

For those that don't know, Gayathri and Venu are from Amnet, a 
publishing service provider we work closely with.

Amnet is unusual in that they are a commercial vendor that is 100% into 
collaborating with us to make tools like WAX-JATS which are 100% open 
source.

It is a rather rare and enlightened org and we are very proud to be 
working with them.
